Founded in 1970 in the heart of Calabria, Tutto Calabria is a family-run producer renowned for preserving the region's culinary heritage. What began with founders Antonio Celli and Adele Sirianni is now run by their children, who continue to grow, select and hand-process chillies using the same traditional methods the company was built on.

Calabria - the "toe" of Italy's boot - has a deep-rooted love affair with the chilli pepper, or peperoncino. Historically one of Italy's poorer regions, Calabria's cuisine grew out of la cucina povera - simple, resourceful cooking that made the most of what the land provided. Pork and chilli became the region's defining ingredients, and nowhere is that more obvious than in nduja, Calabria's famous spreadable, chilli-laced salami. (New to nduja?
