Tutto Calabria’s Calabrian Chilli Sauce is made by crushing sun-ripened Calabrian chillies and preserving them with olive oil, garlic, salt and a touch of vinegar – no sugar, thickeners or artificial additives. The result is a rough, spoonable sauce rather than a smooth bottled hot sauce, with a flavour that’s earthy, sweet and fruity as much as it is spicy, and a gentle smokiness that builds after the initial heat. Tutto Calabria has made it this way since 1970, letting the chillies themselves do the work rather than masking them with other flavours.
Because it’s already a sauce rather than pieces in oil, it’s the quickest of the range to use: stir a spoonful through hot pasta, spread it onto pizza or focaccia before topping, or mix it into mayonnaise or a dressing for an instant kick. It also holds up well to cooking, so it works stirred into a simmering stew, brushed over meat or fish before grilling, or whisked into a marinade.
