Tutto Calabria’s Dried Chilli Flakes are minced Calabrian chilli peppers, dried and packed with nothing else added. Calabria’s hot, dry growing climate pushes these chillies towards a sweeter, more fruity heat than the chilli flakes typically found on UK supermarket shelves, many of which are blended from milder, higher-yield varieties grown for volume rather than flavour. Tutto Calabria has worked with these chillies since 1970, and drying them before mincing keeps the flavour concentrated rather than dusty.
A pinch goes into just about anything that needs warmth: stir into a simmering tomato sauce, scatter over pizza before it goes in the oven, or add to the pan when frying garlic and oil for the base of a pasta dish. They’re just as useful outside Italian cooking - stirred into soups, marinades, roasted vegetables or a homemade chilli oil, anywhere you’d reach for a shop-bought chilli flake jar.
