Char Siu is a traditional Cantonese marinade and glaze for roasted meats - most commonly using pork, but sometimes duck. Char Siu is flavoured with Chinese five spice, Shaoxing wine, hoisin, white pepper and sugar or molasses. Good Char Siu has a lovely depth of flavour with a sweet and salty contrast that works brilliantly with fattier cuts of pork like shoulder or belly.
Lee Kum Kee Char Siu sauce is a great ready-made product that will give you brilliant results. Combine 4 parts Char Siu with 3 parts oyster sauce and hoisin sauce, a tablespoon of Shaoxing wine and a teaspoon sesame oil and marinade your pork belly strips for at least 2 hours, overnight is best, then roast at 190°C or BBQ for 20 minutes, turn and then cook for a further 10 minutes. Brush with a little honey to glaze at the end.
