A pack of Fisan Hand Carved Iberico Cebo de Campo Ham 50g on a white background

Fisan Hand Carved Iberico Cebo de Campo Ham, 50g

Fisan’s Iberico Cebo de Campo hand carved Ham is crafted from Iberian pigs raised in the dehesa: Spain’s oak-dotted pasturelands. Here, the pigs roam freely, naturally grazing on grasses, wild herbs and grains, complemented by acorns when in season. This slow, outdoor lifestyle produces meat with exceptional marbling and depth of flavour, unlike any conventional pork.

Each ham is cured with sea salt and time, Fisan allow their Cebo de Campo hams to mature for 24–36 months, a painstaking process in which the flavour becomes, nutty and delicate, the fat melts beautifully on the tongue, and the aroma develops its signature Iberico sweetness. Serve simply at room temperature with very little else, perhaps a nice crisp Fino sherry.

Founded in 1920 in Guijuelo, Salamanca, Fisan is one of Spain’s most respected ham producers. Still family-run, they work in small batches, combining traditional curing cellars with careful quality control. Their approach honours heritage: raise animals well, respect natural rhythms, and allow each ham to mature to perfection.
