Butifarra de Perol is a type of cooked Spanish sausage, traditionally made using a copper cauldron (the Perol) originating from the Northern region of Catalan. It's made using various parts of the pig including the shoulder, jowl and rump, resulting a rich, slightly gelatinous sausage. It's most common to fry the sausage and serve with beans, giving the finished dish a beautifully rich and tasty finish.
Beans cooked with pork sausage is an extremely classic combination - rich, slightly fatty pork transforms the beans into something truly special. Just over the Catalonian border, the French have Cassoulet - their version of sausage and beans (often with duck as well). This Spanish sausage does give you a similar flavour in your beans.
