Pasta Michele Portoghese Pici, 500g

Pici Pasta is one of Tuscany’s most beloved traditional pasta shapes. Originating from the countryside around Siena, it is made by hand-rolling dough into long, thick strands. Unlike spaghetti, Pici has a substantial, chewy bite and a naturally uneven shape, designed to capture sauce in every twist and curve.

Michele Portoghese crafts their Pici pasta in the heart of Tuscany using premium durum wheat semolina. The pasta is bronze-extruded, giving it a naturally rough exterior that clings to sauces beautifully. Crucially, it is slow-dried at low temperatures, a process that creates the best texture, flavour and preserves all the natural goodness in the pasta.

Pair your Pici pasta with rich sauces - it's very commonly served with a garlicky tomato sauce "aglio e pomodoro" but it's also good with rich ragùs, wild mushrooms, sausage and fennel, or a silky cacio e pepe. Its thickness holds bold sauces beautifully, but is equally delicious with simple olive oil, herbs, and grated pecorino.

The Michele Portoghese family have been crafting artisan pasta since the early 1900s. Their philosophy is rooted in agricultural heritage and respect for quality: select the finest grain, use traditional bronze dies, and never rush the drying. Their pastas are made in small batches, the way Italian families have cooked and eaten for generations.
