Fregola are small balls of pasta made using Durum wheat - they are somewhere between giant couscous and the Levantine moghrabieh. The key difference is that fregola is toasted giving it a nutty flavour and an irregular texture. It can be cooked as a salad, soup, pasta dish or a risotto.
Fregola is a traditional Sardinian ingredient where originally it would have been painstakingly made by hand. Use fregola where you might use couscous or orzo pasta, it's fantastic served either hot or cold and can be paired lots of seasonal ingredients.
