If you're not familiar with Chimichurri, you just need to think of it as South American pesto. It has a base of oregano and parsley with vinegar, chilli, garlic and oil - it's amazing.
As you might expect from something South American, it's perfect with grilled or barbecued meats, try whacking a dollop on top of your next home made burger....come on.

Chimichurri sauce is fantastic on steak. We had sirloin steak on pizza bases (Pinsa romana from Somersetfoodie) with onion and tomato and the sauce made the meal so good - we finished the whole bottle, had to reorder immediately.
