Semolina is simply flour made from Durum Wheat, milled slightly coarser than regular flour and generally used for making fresh pasta. Caputo is one of the leading flour mills in Italy and this semolina will give a lovely amber yellow colour to your dough. It's also brilliant for stretching out pizza dough.
