Pearl River Bridge has been making premium quality soy sauce since 1958 and is one of the leading brands in China. Light Soy Sauce is thinner in consistency and saltier than dark soy sauce, it's used more in stir fries and dipping sauces. Generally light soy sauce is your go to soy sauce and if a recipe calls for soy sauce without further clarification, use light - Chinese use soy sauce like Western chefs use salt.

Dark Soy Sauce has a more intense flavour, it's been aged longer and is best used sparingly with braised meats, stews and marinades.
