Guajillo chillies are one of the most commonly used chillies in Mexico. They are sweet in flavour with slight berry and green tea flavours and have a mild to medium chilli heat. In Mexican cooking, they are almost always paired with other dried chillies such as ancho and pasilla and they are a favourite in traditional mole sauces.
As with most dried chillies, they benefit from being toasted in a dry pan before being soaked in hot water for 15 minutes. Paired with ancho chillies they make a excellent barbecue marinade.
Mexican Chilli Barbecue Marinade
3 x Guajillo Chillies, dry roasted
3 x Ancho Chillies, dry roasted
¼tsp Cumin Seeds, dry roasted
3 x Allspice Berries, dry roasted and crushed
2 x Whole Cloves, dry roasted and crushed
2 x Cloves Garlic, roughly chopped
Sea Salt
1. Rip up the ancho chillies (discarding the seeds) and dry roast in a pan along with the guajillo chillies for 1-2 minutes.
2. Transfer to a small bowl, cover with boiling water and soak for 15 minutes.
3. Blend the chillies with the cumin, cloves, garlic, salt and enough of the soaking liquid to make a smooth paste.
4. Use to marinade chicken, lamb or beef before cooking on a barbecue.

Unfortunately, we cannot mail order frozen items.
All shipments are tracked, we use a combination of The Royal Mail and DPD, tracking numbers are emailed to you for each order.
Our shipping rates depend on the weight of your order and start from £3.99 shipping rates are calculated at checkout.
All the packaging we use is compostable or just paper and cardboard that can easily
be disposed of in your kerbside recycling. (Chilled items are sent in temperature controlled pouches with ice packs
which are not compostible but can be reused).
I recently brought a selection of dried chillis and mexican oregano to make a specific dish.. Beef Chilli Colorado..
The dried chillis were of good quality in their dried state and really popped in taste and flavour after toasting, re hydrating and then blended with other ingredients to make this amazing chilli sauce.. the best taste ever.. the mexican oregano is really pungent yet adds so much to a dish.
I would deffinately recommend your shop and efficient service..

First time making a Thai Green Curry with the Maesri green curry paste, the coconut milk, Thai Jasmine rice & sweet chilli sauce all sourced from yourselves. We were 8 people dining and I wanted something easy to prepare. I did a dummy run the week before and found the paste to be so flavoursome with a nice kick that suited me and my husband but decided to reduce the amount of paste used to tone down the spice a little bit to ensure it suited all palettes. The second time of cooking I actually made it the day before, slowly reheated the next day to avoid the coconut milk splitting and added precooked al dente green beans (substituted instead of the recommend eggplant) to heat through just before serving. It was absolutely delicious with very authentic flavour, one guest said it’s the best Thai curry he’s ever tasted and he’s 80! I’ve shared your company details so hope you get a few more customers - thank you for another go to dish 😊

Pizza base, Mutti Tomato Polpa, Fior mozzarella ball and a tin of sardines all from Somerset Foodie with some olives and other oddments from home enabled my grandchildren (who are pizza connoisseurs!) my daughter and I to have the most delicious pizzas over Easter. We each chose our own toppings and creative designs - completely delicious and very satisfying! Half a pizza is a generous portion by the way… so I still have 3 bases in the freezer! Thank you Ben
