Orecchiette pasta originates from Puglia in Southern Italy. These little round shapes are brilliant for holding sauces and are perfect for the classic Puglian dish of Orecchiette con cime di rapa. Cime di rapa literally translates as turnip tips but is sometimes called broccoli di rape - it's a great tasting winter vegetable but can be substituted for tender stem broccoli.
Pastificio di Martino slowly dry all their pasta, this longer process gives the pasta the perfect texture and combines with the sauce better to give you the best flavour.
