Also know as gochugaru, this is a vibrant red chili powder widely used in Korean cuisine. It is made from sun-dried red chili peppers that are either finely or coarsely ground, resulting in a smoky, slightly sweet, and moderately spicy flavor. Gochugaru is an essential ingredient in many Korean dishes, but most famously in most kimchi recipes.
