Pasilla Chillies are dark in colour with wrinkled skin and have an earthy flavour with a medium to low heat and hints of dried fruit.
They are used extensively in moles and marinades but below is a great recipe for Borracha Salsa or 'Drunk Salsa' made with beer and tequila.

Mexican Tortilla Soup
Recipe for Borracha Salsa
8 pasilla chillies, dry roasted
2 x Cloves of Garlic, peeled and roughly chopped
1 x Onion, peeled and roughly chopped
120ml Freshly Squeezed Orange Juice
200ml Beer (IPA works really well)
45ml Tequilla
Salt
Fresh Coriander
Crumbled Feta (Mexicans use Queso Anejo which is hard to find, feta is not a bad substitute, but you could also use pecorino romano).
1. Remove the stalks from the chillies and discard the seeds. Rip them up into pieces and dry roast for 1-2 minutes.
2. Place the chillies in a small bowl, cover with boiling water and soak for 15 minutes. Then drain, discarding the liquid.
3. In a food processor, blitz up the chillies, garlic, onion, orange juice. Add in the tequilla and then gradually add in the beer.
4. Tip your salsa into a bowl and garnish with crumbled cheese and fresh coriander.
This salsa is brilliant with barbecued meats, grilled fish or just some cracking tortilla chips and a few beers.

All shipments are tracked, we use a combination of The Royal Mail and DPD, tracking numbers are emailed to you for each order.

All the packaging we use is compostable or just paper and cardboard that can easily
be disposed of in your kerbside recycling. (Chilled items are sent in temperature controlled pouches with ice packs
which are not compostible but can be reused).
Whilst this is my first ever venture into cooking with mexican chillies it was certainly an eye opener and flavour wise the Pasilla chilli is amazing and easy to use..

First time making a Thai Green Curry with the Maesri green curry paste, the coconut milk, Thai Jasmine rice & sweet chilli sauce all sourced from yourselves. We were 8 people dining and I wanted something easy to prepare. I did a dummy run the week before and found the paste to be so flavoursome with a nice kick that suited me and my husband but decided to reduce the amount of paste used to tone down the spice a little bit to ensure it suited all palettes. The second time of cooking I actually made it the day before, slowly reheated the next day to avoid the coconut milk splitting and added precooked al dente green beans (substituted instead of the recommend eggplant) to heat through just before serving. It was absolutely delicious with very authentic flavour, one guest said it’s the best Thai curry he’s ever tasted and he’s 80! Pizza base, Mutti Tomato Polpa, Fior mozzarella ball and a tin of sardines all from Somerset Foodie with some olives and other oddments from home enabled my grandchildren (who are pizza connoisseurs!) my daughter and I to have the most delicious pizzas over Easter. We each chose our own toppings and creative designs - completely delicious and very satisfying! Half a pizza is a generous portion by the way… so I still have 3 bases in the freezer! Thank you Ben
