Mulato chillies are dried chillies made from poblano peppers that have been harvested when the fruit is fully matured on the vine. Young poblanos that are harvested and dried are known as Ancho Chillies....are you keeping up!
As you would expect, Mulato and Ancho chillies look quite similar, Mulatos being slightly darker in colour. The longer ripening time does give the Mulato slightly more spice but they would still be considered to be mild.
Mulato Chillies have a flavour of licorice with cherry and bitter chocolate, they are often paired with Anchos and Pasilla chillies to form what is know as 'the holy trinity' of Mexican chillies.
