Chipotles in adobo are jalapeño peppers that have been smoked, the term "in adobo" just means "in a marinade". So rather than in their dried form, these chipotles are really soft and preserved in a sauce made from tomatoes, onion, vinegar and a few extra spices. They are really handy to have as there is no soaking required and within seconds, you can run a knife through them to create a chipotle pulp.
They are an ingredients that are used in lots of Mexican recipes, but try stirring them through mayonnaise, adding to stews and marinades. They are a bit of a go to ingredient.
