Don Bocarte is based in Santoña, on Spain's Cantabrian coast, where the cold Atlantic waters yield some of the finest anchovies in the world. The fish are cured for at least six months in traditional barrels of sea salt, then hand-filleted by skilled sobadoras before being packed in extra virgin olive oil — a slow, traditional process that gives them their firm bite, deep salinity and signature melt-in-the-mouth finish.

The collection includes both the 100g format for sharing boards and serious cooking, and a 48g organic option for everyday use, both used to add umami depth to dishes like puttanesca, salsa verde, anchoïade, pissaladière and Caesar dressing.
