These large, pale whole kernels have a naturally creamy, buttery sweetness and a satisfying soft bite that works as well raw from the bag as it does in a hot wok or a good blender. They arrive unroasted and unprocessed, giving you complete flexibility over how to take them.

Cashews earn their place in the kitchen in a way few other nuts manage. Toss them into a Thai green curry in the final few minutes and they absorb the sauce while keeping their texture. Toast a handful in a dry pan and scatter over a roasted squash salad with pomegranate molasses for a weeknight dinner that looks considered. Soaked and blitzed, they become the smoothest cashew cream - a spoonful stirred into pasta sauce transforms it completely. They also make an excellent base for vegan cheesecake, rich chocolate truffles, and the sort of trail mix you actually want to eat on a long walk.

How to use:

  • To toast quickly, put 100g in a dry frying pan over a medium heat and stir constantly for 3–4 minutes until pale golden and fragrant. Tip onto a plate immediately to stop cooking.
  • For cashew cream, soak 150g in cold water for 4 hours or overnight, drain, then blitz with 100ml fresh water until completely smooth. Season with a pinch of salt; add lemon juice for savoury, or a little vanilla and maple syrup for sweet.
  • Add whole or roughly chopped to stir-fries, noodle dishes and curries in the last 2–3 minutes of cooking to keep their texture. Or press into homemade energy balls with dates and cocoa powder.
