Pujado Solano Filetes de Boquerón are butterfly-filleted white anchovies from the Cantabrian Sea, hand-prepared in Santoña, Spain, and marinated in vinegar before being packed in sunflower oil. The anchovies are caught using selective purse-seine fishing certified by the Marine Stewardship Council, then filleted whole - opened out into a single butterflied piece rather than split into two fillets - by the “sobadoras,” the skilled women of Santoña whose craft has been passed down for generations. The result is meaty, tender and unmistakably artisanal.

Boquerones like these are made for the tapas table. Lay a few fillets across a slice of crusty bread with a swipe of alioli, or scatter them over a tomato salad with good olive oil and a scattering of parsley. They're just as good folded through a potato salad, draped over grilled peppers, or served simply on their own with a squeeze of lemon and a glass of something cold - the marinade does most of the work, so there's barely any effort involved.

  • Once opened, keep the fillets covered in their oil, refrigerate, and eat within a few days for the best texture
