O-Med Cabernet Sauvignon Red Wine Vinegar, 250ml

O-Med's Cabernet Sauvignon Red Wine Vinegar is a deep purple, artisan wine vinegar aged for 12 months in French oak barrels. Made by O-Med, a family-owned producer based in Ácula, Granada, the extended oak ageing gives it a balanced, smooth acidity with real fruit character from the Cabernet Sauvignon base – a world away from a standard red wine vinegar.

Its smooth acidity and depth of flavour make it a good all-rounder for red wine vinegar's usual jobs – dressings, marinades and deglazing – but with more complexity, thanks to the oak ageing. It also stands up well in reductions and pan sauces, where the fruit character has room to shine through.

How to use:
