Most street food taco stalls in Mexico will serve their tacos with a variety of different salsas, but generally the minimum offer is a red salsa and a green salsa. Generally, the green salsa will have a base of tomatillos, which are actually members of the gooseberry family and not related to red tomatoes.
As you would expect from a gooseberry cousin, they have a fruity, sharp and zingy flavour and are perfect to partner rich flavours.
Ingredients: Green Tomatillo, jalapeno chilli pepper, onion, iodised salt, coriander, condiments (E621).
