Tomato frito (Spanish for fried tomato) is a pureed tomato sauce with a hint of onion and garlic, that can be used as a base ingredient or enjoyed simply for its zingy, intense flavour. It is distinct from most tomato sauces because the sun-ripened tomatoes have been fried in sunflower oil.
Tomato Frito is the basis for many Spanish dishes. Try cooking some white fish in this delicious sauce, and finishing with some parsley and olive oil or using it as the base for a quick bean stew. In Spain, some households exclusively use tomate frito rather than cans of traditional chopped tomatoes.
Ingredients: Tomatoes (180g to make 100g of tomate frito), sunflower oil, sugar, potato food-starch, salt, onions and garlic.
