Giuseppe Giusti Agrodolce Bianco is a sweet and sour white balsamic condiment from one of Modena's oldest acetaia - the Giusti family have been making balsamic vinegar since 1605. Trebbiano grapes are gently pressed for their sweet must, then blended with high-quality white wine vinegars and aged in French oak and ash barrels. The result is a pale, golden, syrupy condiment with a clean, bright, fruity tang - sweetness and acidity in proper Modenese balance.

White balsamic is the secret weapon of restaurant kitchens - all the depth and sweetness of a traditional balsamico without the staining dark colour. Drizzle a few drops over burrata, peaches and basil for the simplest summer starter. Finish pan-fried scallops, sea bass or chicken. Stir into risottos as they rest, dress a strawberry salad, or splash into soda water and ice for a non-alcoholic aperitivo with proper character.

Why we love it:

  • Made by Acetaia Giuseppe Giusti in Modena, founded in 1605 - Italy's oldest balsamic producer, still family-owned across seventeen generations
  • Made the traditional Modenese way, with sweet Trebbiano grape must blended with white wine vinegars and aged in French oak and ash barrels
  • Has the clean, bright sweetness of a fine balsamico without the dark colour - brilliant for pale dishes where dark balsamic would muddy the plate
  • Naturally gluten-free, suitable for vegetarians and vegans, with sulphites as the only declared allergen

How to use:

  • Drizzle a few drops over burrata, mozzarella, ricotta or feta with fresh figs, peaches or strawberries for a five-minute summer starter.
  • Finish pan-fried scallops, sea bass, chicken or pork - a small splash after plating, no other sauce needed.
  • Stir a tablespoon into a risotto, polenta or soft-cheese pasta during the final rest for a clean acidic lift.
  • Whisk three parts extra virgin olive oil to one part agrodolce bianco for a brilliant salad dressing - try it with shaved fennel, orange and rocket.
