Fionagh's Original Sourdough Crackers are thin, crisp crackers made with a slow-fermented sourdough base at Norton Barton Artisan Food Village near Bude. The range was developed by Fionagh Harding, who co-founded Norton Barton with her husband on their 350-acre Cornish farm, turning it into a collaborative hub for local food and drink producers. The long fermentation gives these crackers their characteristic tang and a satisfying snap - a proper foundation for a cheeseboard, without shouting over what's on it.

Their plain, gently tangy flavour makes them the workhorse of the range - equally happy under a wedge of hard cheese, a spoonful of chutney, or piled with pâté and a few cornichons. Snap one in half and spread with soft goat's cheese and a drizzle of honey, or serve alongside soup instead of bread for something with more crunch. They hold their shape under a generous topping, so there's no need to be shy with it.

How to use:

  • For a simple cheeseboard, allow 4-5 crackers per person alongside two or three cheeses and a chutney or fruit paste
  • Spread with soft goat's cheese, top with a little honey and a scattering of thyme leaves for a quick canapé
  • Break into rough shards and use in place of croutons on a bowl of soup
