Esperanza del Castillo’s Aged Manchego represents the very best of La Mancha. Crafted exclusively from the milk of Manchega sheep grazing the region’s arid plains. It has a beautifully rich, nutty flavour with buttery notes and a luxurious creamy texture.

Aged for a minimum of 9 months, the cheese deepens into rich sweet and savoury notes, subtle caramel tones, and the distinctive Manchego tang that has made it Spain’s most iconic artisan cheese.

Esperanza del Castillo is a family owned company, founded in 1952. It's based near the town of Pulgar, in the Montes de Toledo district, surrounded by pasturelands and home to the local breed of Manchega sheep.
