Duffy's Guatemala Sweet River 80% Dark Chocolate, 60g

Duffy's Guatemala Sweet River 80% is an intense single-origin dark chocolate, made bean to bar in Lincolnshire from rare, fine-flavour cocoa beans grown by Xoco in Guatemala. Xoco gives its farmers long-term contracts at high prices, and Duffy's buys the beans directly from them. Guatemala is also where Duffy Sheardown's own chocolate journey began. At 80% cocoa, this is the darkest of the three Duffy's bars we stock, and it won a European Silver at the International Chocolate Awards in 2018.

Don't let the high percentage put you off - it's tangy and bright rather than bitter. Expect tangy honey, redcurrant and orange peel, followed by a tart grape and toffee finish. It's the bar for serious dark-chocolate fans, and lovely with a flat white or a glass of something red and fruity like a Zinfandel. It also makes a superb, not-too-sweet chocolate mousse.

How to use:

• For tasting, ensure the bar is at room temperature, then let a 5g square melt slowly on your tongue
  
• For a rich chocolate mousse for four, melt the whole 60g bar with 20g of butter, fold in 2 egg yolks, then fold in 2 whisked egg whites with 1 tbsp sugar. Chill for at least 2 hours.
  
• Grate over a bowl of berries and crème fraîche for an easy pudding
