Burcol Verdina Beans are a prized Spanish variety grown primarily in the Asturias region of northern Spain. Known for their delicate texture and refined flavour, verdina beans are highly regarded in traditional Spanish cooking, particularly in seafood and vegetable dishes.

Small, oval and pale green in colour, verdina beans retain their distinctive green hue even after cooking. Their skin is thin and tender, while the interior becomes creamy and buttery without losing shape.

Verdina beans are sometimes referred to simply as Spanish verdina beans and are occasionally compared to flageolet beans due to their colour and fine texture, though they are a distinct variety.

How to Cook Verdina Beans

  • Rinse the beans thoroughly under cold water.
  • Soak overnight in plenty of water to soften and reduce cooking time.
  • Drain and transfer to a pot with fresh water, herbs, or aromatics if desired.
  • Simmer gently for 1½-2½ hours until tender, stirring occasionally and adding water as needed.
  • Season with salt towards the end of cooking to prevent toughening the skins.
