Artemonte Wild Boar Pate is a proper Spanish game pate, made in the Sierra Morena - the wild oak-forested mountains on the Andalucía and Castilla-La Mancha border, where jabalí has been hunted and cooked for centuries. Slow-cooked with red wine, olive oil, garlic and traditional herbs into a rich, rustic, spreadable pate with the dark depth of real game and a quiet hum of juniper and rosemary. Coarser and more honest than a refined liver parfait - and all the better for it.

The classic Spanish way to serve it is on tostas - slices of toasted country bread, rubbed with garlic, drizzled with olive oil and spread thickly with the pate. Build a tapas board with a few slices of jamón ibérico, a wedge of manchego, some membrillo, olives and a small dish of the pate alongside, or pack the jar straight into a picnic basket with a chilled bottle of fino.

How to use:

  • Toast slices of country bread, rub with a halved garlic clove, drizzle with olive oil and spread thickly with the pate to make Spanish-style tostas.
