Mortadella is an Italian cured meat originating from Bologna in the Emilia-Romagna region. It is a type of sausage traditionally made from finely ground pork, seasoned with spices, and then stuffed into a casing.
One of the distinguishing features of mortadella is the inclusion of small cubes of pork fat called "lardo" scattered throughout the meat, giving it a distinctive speckled appearance. These fat cubes add richness and moisture to the sausage which is then slowly. It has a smooth texture with a delicate balance of savory flavors.
In Italy, mortadella is often enjoyed sliced thinly and served as part of antipasto platters or in sandwiches. It can also be diced and used as a topping for pizzas or added to pasta dishes.
