Porcini mushrooms are prized by chefs across the world for their deep, nutty, and earthy flavour that far surpasses standard mixed forest mushrooms. Known in Italy as “funghi porcini,” in France as "Ceps" or here in the UK as "Penny Buns", they are part of the boletus family of mushrooms and have a distinct spongy underside, rather then the gills of field mushrooms. They add an unmistakable depth and umami richness to dishes, making them a gourmet essential for serious home cooks.
Unlike general dried mixed mushrooms, porcini have a stronger, more intense flavour and a meaty texture that holds up beautifully in cooking. Just a small handful can transform risottos, pasta sauces, stews, and soups into something truly special.
How to use & prepare dried porcini mushrooms:
Rehydrate: Rinse the musdhrooms in lukeware water, then place in a bowl and soak the dried porcini in hot water for about 15–20 minutes. Remove from the liquid and plunge back into boiling water for one minute and drain.
Use both mushrooms & liquid: Drain carefully, reserving the soaking liquid, which is packed with flavour and can be strained and added to your recipe.
Cook: Chop or leave whole, then add to risottos, sauces, gravies, braises, stews, broths or stuffings for an intense mushroom boost.
Why we love them: Roi des Montagnes Dried Porcini Mushrooms bring gourmet flair to everyday cooking. They’re an easy way to elevate simple recipes with the unmistakable taste of porcini, the king of mushrooms.
