Ras el Hanout is a classic North African spice blend that's used extensively across Morocco, Tunisia and Alegria. It translates as 'head of the shop' - the best spices the merchant has to offer. As such, the exact blend will vary from seller to seller but common inclusions are allspice, cumin, coriander, cardamom, cinnamon and cloves.
Ras el hanout is a classic in tagines, it's also amazing used as a dry rub for chicken, fish and vegetables, sprinkle into yoghurt with a swirl of pomegranate molasses for a fantastic dip - it's amazingly versatile and a kitchen essential spice.
