Guanciale is a cured pork cheek or jowl that adds a huge amount of richness and flavour to many classic Italian dishes. It has a melt in your mouth texture and when cooked, the fat renders out beautifully which is used in pasta dishes like carbonara - essentially you use the rendered guanciale fat to create a sauce emulsion with egg yolks. It's also great used in soups, stews and even for luxury pizza toppings.
