In Malaysia and Indonesia sambals are eaten with most meals, it's like serving chutney or mustard on the table. Lucullus Sambal Oelek is made with ground hot chilli peppers, salt and vinegar and is an excellent way of adding depth of flavour and some spicy heat to many dishes.
There are a multitude of different sambal recipes, it basically refers to any sauce with chilli as the base. Sambal Oelek is named after the pestle and mortar that they are traditionally made in.
