These Spanish potato crisps, made by Espinaler, are cooked in pure olive oil and then seasoned with a touch of salt. They are a thicker cut of crisp and in Spain they are used as a base for tapas dishes, topped with pickled anchovies, mussels in escabeche, simple olives or just on their own with a beer.
