Tamales are one of the classic street foods of Mexico. They are essentially a small steamed corn dumpling, which is light, fluffy and totally delicious. They are stuffed with a variety of different fillings from slow cooked pork, chicken, fish or shell fish to beans, spinach and cheese.
To make them you'll need corn husks which act as the wrapper to hold all the filling together whilst they cook, but they also double up a the plate to eat them from when purchased from a street food vendor.
