Beans form part of the corner stones of Mexican cuisine and black beans are one of the most popular types. The Maya diet was based around maize, squashes and beans - the three sisters of agriculture. The corn would provide the structure for the climbing beans to grow up and the squashes would cover the ground to keep the weeds down and stop the soil from drying out.
