Polenta is a versatile and widely used ingredient in Italian cooking. Polenta is actually the name of the finished dish, which is made by boiling cornmeal. Polenta can be served 'wet', a bit like a loose mashed potato and is often flavoured with cheese, truffle oil, herbs or butter. Once cooked, it will set solid and can be cut into chips, which can be fried to give you 'polenta fries'.
