The region is well known for hot and spicy food, which often combines hot chillies and these aromatic, fragrant, slightly mouth-numbing Sichuan peppercorns.

Just like Italian pasta, there are countless different shapes and sizes of Asian noodles, often made with different ingredients and using different manufacturing methods. If you are not making your own noodles, it's worth spending just a little extra on really good ones and the Sau Tao noodles are fantastic.
