These dried Udon noodles made by Akagi in Japan are a great store cupboard noodle for soups, broths and dipping sauces. They require 10 minutes cooking in boiling water and give you the classic starchy, fluffy and chewy texture that Udon is famed for.
The Akagi dried noodle is a slightly finer version of the often thick udon noodle but it's white noodle strands are great served hot with broths or cold - try them cold dipped in Hamadaya Dai Aso Soba Tsuyu with a little thinly shredded nori.
