Yuzu is a citrus fruit used in Japanese and Korean cooking. It's kind of a cross between a mandarin, lemon and grapefruit all rolled into one. It has a really powerful flavour and only a small amount is needed in dressings and mayonnaise. It's also lovely in ice cream and sorbets and to marinade fish and chicken.
