Sherry vinegar is has such a wonderful flavour and is probably my most favourite vinegar to use. Jerez is the city in Spain considered to be the home of Sherry and there are many different Bodegas producing the fortified wine - many of them have strong link to British companies.
Aged in American oak barrels for over 6 months, the complex flavours of this vinegar are outstanding and a splash or two in vinaigrettes, soups and marinades will give your dish an amazing lift.
Delicious used a couple of spoonful in a beef casserole tonight, made all the difference.
