It's between the Adriatic and the Gran Sasso mountains. The founders, the Sergiacomo family, were millers, and the business is now run by their grandchildren, Gianluigi and Stefania Peduzzi. Every stage of the process is slow and deliberate. The family chooses its durum wheat semolina for protein and flavour, then mixes it with cold mountain spring water. The dough is pushed through traditional bronze dies, which leave the surface of each piece rough and slightly chalky. It's then dried slowly at low temperature, for up to two days, instead of the few hours at high heat used by industrial pasta makers.\u003c\/p\u003e\n\u003cp\u003eThese rigatoni are wide, ridged tubes with a wonderful texture from the slow drying. Their rough surface grips sauce rather than letting it slide off, and the wide tubes fill with sauce making each mouthful taste amazing.
