Sichuan - sometimes spelt Szechuan - is a province in the South West of China and is one of the most popular cuisines across the country. The region is well known for hot and spicy food, which often combines hot chillies and these aromatic, fragrant, slightly mouth-numbing Sichuan peppercorns.
Sichuan peppercorns are a really important ingredient to our Dan Dan Noodle recipe, and many other dishes of that region.
