Ras el Hanout is common across Morocco, Tunisia and Algeria and comes in many different forms. It translates as "Head of the Shop" - a blend of the shop's best spices. This paste is so versatile, it's heavenly used as a marinade for chicken, lamb or beef. It's also great stirred through couscous and rice or used to flavour grilled vegetables. Use 25-30g per portion.
