Preserved Mustard Stem with Black Fungus, 80g


Preserved mustard stem is made from the knobbly, swollen stem of a type of mustard green. It's made and eaten right across China but the most famous is made in Chongqing, within the Sichuan province.

It's a really delicious crunchy pickled vegetable that's slightly sour, slightly salty with lots of umami flavours. This version has the addition of black Chinese mushrooms, referred to as 'black fungus'. It can just be eaten as a condiment with rice or mixed through noodle dishes and even salads to layer up the flavours and textures.
