Pearl Barley is often under rated but it's a real kitchen workhorse. It's brilliant added to soups and stews - a beautiful chicken soup with cavalo nero and pearl barley is a real winter warmer. It also makes and interesting alternative grain for a risotto and can also be used hot or cold in a grain salad with roasted root vegetables and any number of different dressings.
