Mung Bean Noodles, sometime called 'Glass Noodles' or 'Thread Noodles' are made from ground mung beans which is a plant cultivated in South East Asia.
They make an incredibly versatile noodle and absorb flavour really well. Use them in stir-fries and broths, they are particularly good for noodle salads.
Soak them in boiling water for 3-4 minutes before using.
