Originating from The Yemen, Zhoug (sometimes spelt zhug) is a wonderfully herby and spicy sauce. Made from coriander, garlic and chillies, it's now hugely popular all across the whole of the Middle East. Think of Zhoug as a green harissa or a Middle Eastern pesto, it's really popular with falafal and shawarma, served along side houmous. You can also add it to soups and stews, add it to salad dressings and drizzle over roasted vegetables or meats.

Ingredients: Rapeseed oil, coriander 33%, lemon juice, cumin, chillies, salt, cardamon, spirit vinegar, garlic, spice.
We tried a spoon of this mixed with yoghurt and spooned over the chicken that had been marinaded in the Chermoula paste. What a fab combination! This light but creamy, refreshing dressing balanced the warm spices of the Chermoula marinade, lifting the very ordinary chicken to something special. We will most definitely be adding this to a favourites list!
