For an authentic Thai Green Curry for 4 people, stir fry 2 tablespoons of the paste for one minutes to get the flavours going, add 400ml of coconut milk and bring to a simmer. Now add all the other ingredients that you are using, diced chicken and aubergines are really authentic but you can also use fish, prawns or tofu. Simmer everything until it's cooked through and you have cooked your rice, Jasmine Rice is the perfect partner for this dish. You can finish the dish with a few splashes of Fish Sauce, which acts as the perfect seasoning.
